One Le Creuset black iron frying pan (orange enamel range), bought years and years ago for a fiver because the shop had lost the handle; remaining stub is ideal for both top and oven (and much too heavy to lift with a long handle anyway IMO). Roasting pan is an enameled LC fp, wooden handle removed - never used as fp because food stuck to the enamel but now ideal for making gravy on a solid range after you have taken the joint out to rest. Decent weight-base roasting pans are expensive. A small good weight nonstick fp, make unknown but italian, bought in vg condition in a charity shop for c £3, handle now removed. Stub a bit unsightly and too small for holding by but makes an excellent oven dish for small quanbreasties and easy to wash. Purpose made paella dish, Circulon, never seen them as normal stock - bought in a dept store Jan sale when they sometimes have oddments and odd lines. Excellent but a bit big for everyday use for two of us. Worth making enquiries if this would suit, otherwise, consider taking the handle off a suitable frying pan.

I suggest you keep an eye open in charity shops for a good non-stick frying pan. At the price you'll pay there, you won't mind taking the handle off.

You're welcome Paul. You may be aware already, but such pans need seasoning (I've got several inc. the Nisbets paella pan). Heat your oven to max. Wipe some veg oil (I use groundnut) all...

Cheers jane
