There is a good reason for that - fresh eggs are bacteriostatic so don't need refrigeration, they inhibit growth naturally. However when they get older then bacteria can begin to grow.

The whole egg risk got out of proportion in the press even at it's worst only one egg in several thousand would contain Salmonella now it's even less. However - choose an egg with Salmonella in it, -mix it with 100 others into a mayonnaise -leave it overnight in the kitchen because the bowl didn't fit the fridge -use it to make coleslaw and potato salads -leave the mayo and salads in the kitchen for another night -put them out on a buffet at 0900 in a warm marquee - serve the wedding reception with the same at 1500.

I tried doing beans again, this time with more success. The recipe is based on one in Gordon Ramsay's Kitchen Heaven, but I've changed quite a lot. GR's dish looks...

Result 80-100 guests get very ill. bride and groom are thrown out of honeymoon hotel and end up in hospital Two other food businesses have to close down as staff were guests and ill and the interior of a car has to be replaced due to it's four occupants having severe intestinal evacuation half way down the M1.

And yes it did happen - I investigated it. Mike
