In a famous scandal some years back, it was proved that one of the two authors of an extremely well-received cookbook had not tested about 35% of the recipes she was responsible for. They simply did not work. The partnership broke up after that. Like any experienced cook, you'd look at a recipe and know that 1 teaspoon of baking powder wouldn't do much for 2 cups of cornmeal, but people who need the info wouldn't know it! I overtest, if anything. My rule for the cookbook I wrote last autumn was five test runs and the last tasting to be by Italians. I was hoping that ethics was also something you'd reckoned on. I think I am getting some, because I spent 10 minutes the other day in the supermarket opening egg boxes and checking the stamps to be sure I wasn't buying eggs from caged chickens! I just decided last week that a chicken's life is too short to e spent in a cage. I paid double for code 1 eggs, but at least I am not contributing to desperate hen conditions. I like to consider and play with particular ingredients sometimes. I'm kicking around leeks lately, and stale or dried bread. The problem is I then have to eat it and my diet is overdue.
