Easy enough. She most likely disagreed with the treatment of food animals prior to dissolution and processing, so refuses to be a consumer. Thus ethically excluding herself from a process she disagrees with, without being self righteous or doing something illegal like many of the more militant and often ignorant animal liberation activists.
To turn it the other way around, how would you react if you were the only meat eater there and people were coming up to you all afternoon asking you why you were eating a putrid lump of dead animal, laced with antibiotics and steroids and kept in a freezer for months? Then pointed to the fresh juicy vegitables with richly flavoured sauces and marinades, and said that you were insane not eating these foods instead. She possibly saw your comment as a hostile statement rather than the opening of a conversation.
It doesn't matter if the meat is dead, its how it lived and died I would buttume she finds objectionable. Next time you come across a vegitarian, try having a conversation. Opening with something like " So how do you replace the protien in your diet?" or "How do you stop the food from being bland without meat?" would work much better than "But its already dead".

Many vegitarians are very well informed about nutrition and can make a meal without meat that doesn't pretend to be meat, and tastes delicious. Many also have no idea of nutrition and couldn't boil a lentil to save their lives, but the same holds true of anyone who can't cook. There are veggie ready meals and takeaways too after all.
