Well Sarah, having met you in real life, I would say you are very cultured but not in a la-de-dah sense and I admire...

I've never seen them in an 'ordinary' supermarket, but then I don't look in their freezer compartments very often :-) Depending on just how far back in time you live it might be worth checking the yellow pages for places you haven't noticed; even checking in places that you'd have to travel to get to (if you can travel at all). You might find a local Chinese restaurant would sell them to you. As a last resort you could try making them; my mother did, just once, and swore she wouldn't bother again because getting the pastry thin enough is a real pain. I found a recipe at About.com; Google may help you find others (and more detailed instructions) online. For the (North American) all-purpose flour I'd use something like a little over 1 cup bread flour and a little less than 1 cup plain flour. Bread flour has too much gluten to be subsbreastuted, plain flour too little.

regards sarah

================ Wonton Wrappers

It's easy to make your own wonton wrappers. This recipe yields about 24 wonton wrappers.

INGREDIENTS: + 1 egg + 3-4 teaspoon salt + 2 cups all-purpose flour + 1-3 to 1-2 cup water, as needed + Extra flour or cornstarch as needed

PREPARATION: Lightly beat the egg with the salt. Add 1-4 cup water.

Following up to sarah No, I thought he was brilliant and I wasn't watching for Billie Piper either. They have brought a quirky realism into the...

Sift the flour into a large bowl. Make a well in the middle and add the egg and water mixture. Mix in with the flour. Add as much of the remaining water as necessary to form a dough. (Add more water than the recipe calls for if the dough is too dry).

Form the dough into a ball and knead for about 5 minutes, or until it forms a smooth, workable dough. Cover and let rest for 30 minutes. Turn the dough out onto a lightly floured surface. Roll out until very thin, and cut into 3 1-2-inch squares. Store in a plastic bag in the refrigerator or freezer until ready to use. -------------------------

-- Think of it as evolution in action.
