Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 c All-purpose flour 1-2 ts Baking powder 1-16 ts (dash) of cinnamon 1-2 ts Salt 1-2 c Butter 1 c Granulated sugar 2 ea Eggs 1 t Vanilla 11 oz Finely chopped dates 1 c Chopped walnuts Confectioner's sugar
Toss dates and walnuts with 1-3 cup of the flour. Toss in colander over mixing bowl to remove excess flour. Set dates and walnuts aside. Sift remaining flour, baking powder, cinnamon and salt into mixing bowl with reserved flour, combine well and set aside. Cream together the butter and sugar until smooth. Add eggs and beat until fluffy. Stir in vanilla. Gradually blend in dry ingredients, beating well after each addition. Fold in the dates and nuts. Spread evenly in a well-greased 9 x 9 or 11 x 7 pan. Bake at 375 degrees F. for 30 minutes, or until firm when lightly touched. When cool, cut into 15 rectangular bars and roll in confectioner's sugar. Store in a single layer in paper towel lined tin. Note: I used the packaged diced dates.
