Doesn't surprise me. Every tool has someone who finds it difficult to use. Good thing there are so many variations of everything.
Ahh... I hadn't looked into it very closely. I was buttuming the wheels were the metal ones I have seen in several cheaper devices, but of better quality. The water stones would be much better but will still wear out. I buttume there are replacement wheels available.
Its just another skill to learn I suppose. If I hadn't got the stones for sharpening woodworking tools, I would possibly have used something different. Its not such a complicated process though. Once you get the knack, it just takes a minute or two to get the edge back and ready to go again.
The diamond steel is as much for the benifit of the harder steel used in Global knives I think. The harder the metal the more likely it is to splinter than softer metal, and the spreading action of a normal steel might not work as well.

To be honest, I don't think there is that much quality possible either way with a sharpening stone. So long as it is of a fairly uniform grit, I doubt anybody would be able to tell the difference without a microscope, and there is a finite sharpness decided by the grade of abrasive the hardness of the steel and the angle of the bevel. A hard knife like a Global would hold a fine edge longer, but it will still wear away eventually.
