I'd say so, except that I've met a few people who've seen other people doing the fancy...

FWIW I know someone who's found the guide awkward to use.

The sharpener is two sets of tiny circular stones , one set coarse, the other fine, which circulate in a water bath. The knives are pulled across them at an angle set very carefully by slots in the sharpener. It seems designed to mimic as closely as possible the effect of proper water stones.

I don't recall -- I have no single sided knives, and I don't know if Global makes any. I have run a couple of my knives through the sharpener, and it certainly did not damage them although I felt I put a better edge on more quickly using my stone. But those who don't know how to use a stone are probably better off with the sharpener -- it bears little resemblance to the hideous little thing my grandmother-in-law used to butcher her carving knives.

Given the quality of the knives and their diamond steel, I think it quite likely their stones are extremely high quality. Whether anyone needs that level of quality is another matter. I use a very good water stone that I've cherished for the last 20 years -- certainly not Global, but I can't remember whose.

I didn't know anything about sharpening anything until I started working with histology knives :-)

that right Doesn't surprise me. Every tool has someone who finds it difficult to use. Good thing...
