Is this a really marmalade thing or the sort of onion compote that appeared with patZ maison and such like things some years ago?

If the latter here's a recipe,

600 g red onions 550 ml red wine 100 ml red wine vinegar 60 ml water 75 g honey 20 g unsalted butter salt and pepper

Peel and thinly slice the onions.

Pour the wine into a pan and bring to the boil on a high heat. ignite and continue boiling until all the alcohol has burned off. Set aside to cool.

Put the wine, the vinegar and onions in a pan. Cook on a medium heat until the liquid has just about gone, maybe half an hour or more. Reduce the heat a little, add the water and honey and cook stirring regularly until the liquid has reduced and thickened to a glaze. Add the butter, adjust the seasoning, cool and store.

I made this five days before last Christmas. Out of the pan it was distinctly disappointing but on Christmas day it had changed and was lovely.

Variations that are good include adding sultanas, a little chile, replacing half the onion with figs 2-3 the way through the cooking.
