Apart from the water intake rocketing up (*) I've been mainly eating salads, grilled chicken or fish, with the odd salad potato.. and easting tubs of ice cream in one sitting (I don't have a freezer.. so its either eated or wasted!)
I think the key to salads (or it is to me) is to have a big variety of ingredients and-or to serve it in different ways.
For example tonight I had grilled chicken kebabs with chicken in a spicy marinade, peppers, onions, tomatos and courgettes on the skewer served in pittas with houmous, aioli and green salad.

Yesterday, was chicken stuffed with sage and onion stuffing wrapped in bacon, with new potatos, coleslaw, and a very mixed salad (consistiing of anything salad like you can get normally in a supermarket!)
Tomorrow will be left over day, so the remaining kebabs and finishing off the rest of the salad stuff. I'll probably do some herby-lemony coucous too to add some zing.

(*) Being out on the bike in this weather, I've also resorted to trying out those expensive isotonic or is it hypotonic sports drinks.. a quiick taste test.. yuck! A bit of me says it can't be difficult to "brew" your own... I'm guessing water, a splash of lemon jiuce and a pinch of salt and sugar? Anyone got a better idea or recipe?
