2000 Bordeaux

Can't help personally on most of these. Can't help on La Fleur Carrere - said by the poster to be Saint-Emilion but is, I think, in fact a Montagne-St.Emilion and not enbreastled to any appellation from the Jurisdiction itself.

I have drunk several vintages of the Chateau Tour Du Pas St. Georges, as the poster says another satellite from St-Georges-St-Emilion, but, in my view a good one and in a year like 2000 a pretty good equivalent of a very decent Saint-Emilion Grand Cru. It comes from the Belair stable of Mme. Dubois-Challon and is made by Pascal Delbeck who also made Ausone for so many years. If the price is fair you really won't go wrong with this, and a little patience to allow its best to come through - it can be quite firm in its youth and this was 2000. I know it to be highly thought of - and served to his guests - by the first English Chancellor of the Jurade de St.Emilion who is really one of the current experts on this area. It is also praised by Hubrecht Dujiker & Michael Broadbent.

Is the sip and spit method enough to evaluate a wine
Bill Loftin Bill, I think that you're talking about judging the finish of a wine. To me, that is all about retronasal olfaction, so simply swishing the wine in your mouth and...

Hope that helps and there's still some left. Normally good buys go between tasting the trial bottle and going back for more I used to find - a corkscrew and glbutt in the car helps prevent that now.
