Carbonating...Chardonay As has been pointed out, Chardonnay is the grape of Blanc de Blanc Champagne and is used in many of the wines of Champagne, with Pinot Noir and Pinot Meuniere being the others (primarily). So, all Blanc de Blancs will basically be sparkling Chard. Now, some years back, a producer of sparkling wine (probably named Champagne in the US) did do a Blanc de Blanc and then added Chardonnay still wine to it. I forget which producer this was, but they produced a plesant little sparkling wine, though quite one dimensional. Maybe someone remembers this wine ( Korbel?), better than I, and give you the name, should it still be produced. As I recall, the word "Chardonnay" was clearly displayed on the label. Seems that it was in the US$12-btl range, but that WAS some years back. It was probably a pbutting marketing fad, but maybe it had staying power. Other sparklers that you might want to look into would be Proseco (already mentioned), and Asti (the REAL Asti). I would also suspect that some producers in OZ have worked with the Chard grape, as they do like to make sparkling Shiraz, and others, and Chard does well in many parts of OZ. Next to being in the Champagne region, you might well be near the center of sparkling wines. Hunt
