OK, only slightly OT, as I'm also asking for wine list recs. as well.

We will be in Hawai'i for much of September. I've already made dining reservations for our time on Kaua'i, and then most of the time on the North Shore of Oahu. I'm looking for recommendations for fine-dining restaurants, especially with great wine lists. Right now, we are already doing La Mer (a favorite of ours), Bali by the Sea (have had good, and not so good experiences here), 3660 On the Rise (always good), Alan Wong's King St (should be re-opened by then), and would like to add two more. In years past, we've done the Hau Tree Lanai, Aaron's On Top of the Ala Moana, John Domminis', Michel's at the Colony Surf, Sam Choy's and Nick's Fishouse. Of these, I rate Aaron's #1, Domminis' & Hau Tree tied for #2, with Michel's and Nick's at the bottom of the list. While I can throw two of these into the mix, I'd rather try someplace new.

Are there any new spots, that I should look into? Who is the " hottest" new chef on Oahu?

Also, I've heard some good recommendations for Ola SP? on the North Shore. Any reports, as we have one night without dining reservations there?

While I'm not looking to spend ALL of the money that I can, I don't hesitate to dine anyplace so long as there is good value.
