But, what is a "simple light sauternes"? Something that comes in a half-gallon jug with a screwtop and which is served without benefit of stemware directly from the paper bag it was packaged in? Seems a bit oxymoronic to me. Every reasonable sauternes I've encountered was neither light nor simple, but certainly the optimal accompaniment.

I'm thinking you definitely need that taster. I "thought" rich, Chardonnnay--you've taken it to the ultimate level.
